This easy recipe is to be used with the Prime Rib recipe. You can bake the pudding in one pan or in 10 muffin cups, your choice. Either way, it's mighty good.

INGREDIENTS:

  • 1/3 cup plus 4 tablespoons of the prime rib roast drippings
  • 6 Eggs
  • 2 cups Milk
  • 2 cups Flour
  • 1 teaspoon Salt

    Making The Pudding:

    1. Preheat the oven to 375 degrees. Grease a large roasting pan, Pyrex dish or 10 cups of a muffin tin with a teaspoon of the dripping fat.

    2. In a mixing bowl, whisk the eggs until frothy. Whisk in the milk and the remaining drippings. In a mixing bowl, combine the flour and salt together. Whisk the egg mixture into the flour mixture and mix well.

    3. Pour the matter into the prepared pan or muffin cups. Make the pudding about 50 minutes, undisturbed. Remove from the oven and serve hot.
