Making this Tamale Pie is one of my most favorite dishes to prepare. It is easy and it is delicious.
There has been a tradition in my family for more years than I can count, to make this dish during the holiday period, specifically between Christmas and the New Year. When there were a lot of us still here, it was Tamale Pie and Gumbo for the New Year. Naturally along with Black-Eyed Peas. I am the top of the rung now, and I miss them and the sharing of such fine foods.
Just after Christmas, Mexican Deli's had the greatest fresh tamales where I grew up, and they are what we used to make our Tamale Pie. Today, I use ground turkey but if you prefer, ground beef can certainly be used or even a mixture of the two.
I can tell you, that when I do make this dish, there are never leftovers.
It is indeed my great pleasure to share this recipe and pass it along to you and yours. I do so, with much love.

THE INGREDIENTS

1 lb. Ground Turkey - (Ground Beef if you prefer)

  • 1 package of Jimmy Dean's Hot Sausage
  • 2 tablespoons Olive Oil
  • 1 large Onion, finely chopped
  • 1 Green Bell Pepper, finely chopped
  • 6 cloves Garlic, finely minced
  • 2 ribs Celery, finely diced
  • 1 teaspoon ground Cumin
  • 1 teaspoon Oregano Leaves
  • Salt and Black Pepper, to taste
  • 14.5 oz. can Tomatoes with juice
  • 2 8 oz. cans Tomato Sauce
  • 1 small can large Black Olives
  • 1 16 oz. package Cheddar Cheese or any Mix of Cheeses, grated
  • 1 8 oz. package Monterey Jack Cheese, grated
  • 8 to 12 Tamales - (When I cannot get fresh Tamales from a Hispanic Market, I use El Monterey Beef or Chicken Tamales purchased at most any Supermarket Deli. Lately, I found wonderful Tamales at Costco.)
  • 2 or 3 Green Onions, thinly sliced
  • 10 Corn Tortillas

  • OR IF YOU FEEL LIKE IT, MAKE YOUR OWN TAMALES.

    Making the Tamale Pie:

    1. Crumble the sausage into a large skillet and cook until browned and done. Drain the fat off and discard it. Wipe the skillet. Place sausage on paper towels to absorb remaining fat.

    2. Heat olive oil over low heat and add the onions, bell pepper and celery. Cook until softened.

    3. Add the turkey and garlic. Cook until turkey is browned and done. Add the sausage.

    4. Add the seasonings and taste to insure that the salt level is appropriate.

    5. Add the canned tomatoes and the tomato sauce. Adjust seasonings. Cover and simmer for about 40 minutes.

    6. Using a greased Pyrex dish (8"x11.5"x2.5"), line the bottom with about 6 tortillas coming up the sides.

    7. Cut some of the tamales into 2" chunks and place atop the tortillas to make a layer.

    8. Spoon a layer of the meat mixture over the tamales.

    9. Sprinkle a thick layer of cheese over the meat mixture.

    10. Make another layer by placing enough tortillas over the cheese to cover.

    11. Continue with the layers once more, ending with a thick layer of cheese.

    12. Garnish placing the olives in a design and sprinkling the sliced green onions on top.

    13. Sprinkle top with a wee bit of salt, black pepper and paprika.

    14. Place in an oven that has been preheated to 325 degrees and bake uncovered for 40 to 45 minutes or until the cheese is melted and lightly browned.
