I
love potatoes. Potatoes prepared in fashion are for me.
When I lucked upon this recipe I had to try it.
Such simple ingredients, no fuss, but there certainly is a twist
in the preparation.
KEY: Be sure that potatoes are good and tender.
INGREDIENTS:
5 lbs. medium sized Red-skinned or New Potatoes
1 medium White Onion, finely grated
2/3 cups Cold Water
1/2 cup Distilled White Vinegar
1 teaspoon Sugar
1/2 teaspoon Coarse Salt
1 cup Best Food's Mayonnaise
chopped Parsley, for garnish (optional)
Making The Salad:
1. Place potatoes in a large pot and cover with water. Bring to
a boil.
Reduce to a simmer and cook until soft when pierced the tip
of a knife.
It should take about 30 to 35 minutes.
Drain, and allow to cool. Peel potatoes and slice them into 1/4-inch
slices.
2. Combine potatoes, onion, water, vinegar, sugar and salt in
a large bowl.
Toss gently between two large bowls, trying not to break up the
potato slices.
Let stand for about 10 minutes. Add mayonnaise and mix gently
between two large bowls until the ingredients are well combined
and creamy.
Refrigerate for at least 3 hours. The mixture will thicken as
it stands.
3. Garnish with parsley. If you like maybe add sliced hard-boiled
eggs.
THIS
POTATO SALAD COULD EASILY BECOME A FAVORITE.
