Slightly fatty pork should be used in this dish otherwise it will burn
and dry out during the cooking process. The brown sugar, brushed over
the pork during roasting, gives the pork a nice brown glaze and adds a
crisp texture and salty sweet taste.
INGREDIENTS:
1 lb. Pork Leg, with a little fat
4 tablespoons Brown Sugar, packed
1/3 cup boiling Water
Seasoning
2 tablespoons Soybean Oil
1 1/2 tablespoon light Soy Sauce
1 tablespoon dark or mushroom Soy Sauce
1 tablespoon Rice Wine of Dry Sherry
1 tablespoon Sugar
1 teaspoon Sesame Oil
1/4 teaspoon Salt
Preparing the Pork:
1. Cut the meat into strips and place in a dish with the pre-mixed seasoning
ingredients. Mix well and marinate for 2-3 hours turning frequently.
2. Thread the strips of pork on a thick metal skewer and suspend them in a
preheated hot oven (400 degrees) over a drip tray to roast for 10 minutes.
3. Mix the brown sugar and boiling water together, stirring until the
sugar has melted. Remove the pork from the oven and brush
liberally with the syrup, then return to the oven to roast for a
further 5 minutes. Brush again with syrup, roast again very briefly,
then remove from the oven and brush with a final coating of syrup.
4. Cut into slices and arrange on a serving plate. This meat can be served
warm or cold.
