The Girl In The Dream

My husband's favorite.
But then maybe the favorite of many.

INGREDIENTS:

  • 2 1/2 cups Pecan Halves
  • 4 Eggs
  • 1 cup Sugar
  • 1 cup Corn Syrup
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract or Rum Flavoring
  • 1/2 teaspoon Cinnamon

    Making the Pie:

    1. Use Flaky Pie Crust for your shell. Do not pre-bake. Refrigerate until you are ready to fill.

    2. Preheat oven to 350 degrees.

    3. Beat the eggs, sugar, corn syrup, salt, vanilla or rum and cinnamon together until light and airy. Add 2 cups of the pecans.

    4. Pour into shell and arrange the remaining pecans on top. Bake for one hour. Check for doneness by inserting the tip of a knife into the center. If it comes out clean, the pie is done. Also, the pie will "puff up" somewhat when it is full baked.
