Panko Chicken, my version of fried chicken. I normally use boneless and skinned
chicken breast, however, boneless and skinned thighs are great too. This is so quick and so easy.
INGREDIENTS:
1 lb. boneless & skinned, Chicken Breast, cut into 2-inch bite size pieces
1/4 cup All-Purpose Flour
1 Egg, beaten
1 1/4 cups Japanese Breadcrumbs (Panko)
Coarse Salt, to taster
fresh ground Black Pepper, to taste
1/4 teaspoon Garlic Powder
1/2 cup Vegetable Oil
Making The Chicken:
1. Season chicken pieces with a little salt and dredge through the flour to coat.
Shake off excess.
2. Beat the egg in a medium size bowl and add the salt, pepper and garlic powder.
Add the floured chicken pieces to the add mixture and mix to coat them well with the egg mixture.
3. Heat the oil in a large frying pan to about 350 degrees.
4. Put the Panko bread crumbs in a large plastic bag and put the chicken in the bag and shake it well
to coat all of the pieces.
5. When the oil is hot, put all of the pieces in and cook for about 4 to 5 minutes on each side and the
chicken pieces are nice and brown. Remove to a paper towel to draw out the excess oil.
SERVE WARM, AT ROOM TEMPERATURE OR COLD. IT IS GOOD ANYWAY YOU EAT IT.
