I learned to make this Macaroni and Cheese from my Mother.
It's easy, it's rich, it's delicious!
You will notice that I use boxed Kraft Dinner Macaroni. I do so because of the size of the macaroni. Somehow using it lends a little something to this dish, however, any packaged macaroni can be used and will have a great result.
ENJOY.

INGREDIENTS:

  • 1 box of Kraft Dinner Macaroni, or 2 cups Elbow Macaroni
  • 1/4 stick of Butter or Margarine, sliced into pats and then quartered
  • 1 cups Cheddar Cheese, grated
  • 1 cups Monterey Jack Cheese, grated
  • 1 1/2 cups 2% fat Milk
  • 2 Eggs, beaten
  • Salt and Black Pepper to taste
  • Paprika

    Making The Macaroni and Cheese:

    1. Cook the macaroni according to the box directions. Discard the packaged cheese packet or use it for another dish.

    2. When it is done, strain and rinse under hot water.

    3. Using a square greased shallow Pyrex dish, begin stalking the macaroni by first putting four quarters of the butter or margarine in bottom of the Pyrex dish.

    4. Mix the grated cheeses together.

    5. Finish by making one layer of macaroni, one layer of cheese, place 8 butter or margarine quarters evenly over the cheese, one more layer of macaroni and end with a lay of cheese, leaving a larger amount of cheese for the top layer.

    6. Beat the eggs well and add the milk and beat again. Add salt and pepper to taste.

    7. Pour over the macaroni. The egg mixture should come up to just the top layer, not over it.

    8. Place the remaining butter or margarine quarters evenly over the top layer of cheese and sprinkle with a little salt, pepper and paprika.

    9. You may refrigerate until ready to cook or cook immediately.

    10. When ready to cook, preheat the over for over to 350 degrees. Allow to bake for about 25 to 30 minutes. The top should be nice and brown and the sides should show a custard appearance.

    11. Check the center for doneness as you would a cake. A toothpick coming out clean shows that it is done.
