Pacific Coast Highway

Cordi, my dear friend for a very long time recently gave me this recipe. It is so good. I asked her if I might share it here. Her gracious answer, YES! Here is is. One you are surely going to enjoy. YUMMY!!!!!!! Trouble!!!!!!!

INGREDIENTS:

 

  • 1 Can of Apple, Peach or any Pie Filling you prefer
  • 1 Cup Light Brown Sugar
  • 1 Cup Raisins. If you use Raisin Bread use just 1/2 cup of raisins.
  • 1 loaf of Raisin, French ot Italian bread. Tear or cut bread into 1" pieces
  • 6 eggs
  • 1 3/4 Cups of milk ( Shame of me, I used 1/2 and 1/2)
  • 1 teaspoon Vanilla
  • Maybe 1/4 stick of butter cut into small pieces to dot the pudding before baking.

     

    Making the Bread Pudding:

    1. Mix together eggs, 1/2 of the brown sugar, cinnamon, milk and vanilla and pour over bread. Mix in the pie filling and 1/2 of the raisins. Refrigerate for 3 hours.

    2. Butter a 13" x 9" x 2" baking dish.

    3. Pour bread mixture in baking dish. Sprinkle on a little cinnamon, the remaining brown sugar and raisins. Dot with butter.

    4. Bake at 375 for 40 minutes

    Nutritional Information Per Serving: I did not figure this out as of yet. So, don't even think about it, just enjoy.
