Great with anything, anytime. Hummm! What a taste.
INGREDIENTS:
8 Plum Tomatoes, quartered
1/4 cup Balsamic Vinegar
1 tablespoon Extra-Virgin Olive Oil
Kosher Salt, to taste
Freshly ground Black Pepper, to taste
Making the Drink:
1. Preheat the oven to 400°.
2. In a medium size bowl, combine the tomatoes, vinegar, olive oil, salt and
pepper. Toss to coat the tomatoes.
3. Spread the mixture on a rimmed baking sheet and place in the oven. Bake until
the skins shrivel and the tomatoes turn slightly brown. This should take about
30 minutes or so.
4. Remove from the over and allow to cool. Use in a salad or a side dish. Wonderful
as a spread for bread. Options are unlimited. Delicious.
