My husband and I heard a very interesting woman being interviewed on the
radio one day while taking a ride around town.
She talked about this recipe. I later learned that her name is Shirley O. Corriher,
author of COOKWISE, a wonderful cookbook.
Although this recipe is not in her book, the way she described making this applesauce
simply intrigued us both. We had to try it. I am so happy that we did. It's
unbelievably simple and is so very good.
ENJOY.
INGREDIENTS:
5 green Delicious Apples. Peel and pare them. Cut into slices or chunks, whichever you prefer.
1/2 cup Brown Sugar, packed
1 teaspoon Cinnamon
pinch of Salt
Making The Applesauce:
1. Place the apples in a microwave safe dish large enough to hold them .
2. Cover them with Saran Wrap and microwave for 10 minutes.
3. Mash them with a potato masher and add the sugar, cinnamon and salt.
4. Stir to blend in the sugar mixture, allow to cool and then refrigerate.
This is called EASY.
